Sesame-Crusted Grilled Tuna Steaks

  • 4 steaks (6 oz each) Tuna steaks (1 inch thick)
  • 1/4 cup Soy sauce
  • 2 tablespoons Sesame oil
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Ginger (grated)
  • 3 tablespoons White sesame seeds
  • 2 tablespoons Black sesame seeds
  • 2 Green onions (sliced)
  • for serving Lime wedges

    In a shallow dish, whisk together soy sauce, sesame oil, honey, rice vinegar, and grated ginger to make the marinade.

    Pat tuna steaks dry and place in marinade. Turn to coat both sides. Marinate for 15 minutes at room temperature (not longer, or the acid will cook the fish).

    While fish marinates, mix white and black sesame seeds on a plate.

    Preheat grill to high heat (450-500°F). Oil the grates well.

    Remove tuna from marinade and press both sides into sesame seeds to coat generously.

    Grill tuna for 2-3 minutes per side for rare (recommended), 4 minutes per side for medium-rare. The center should still be pink/red.

    Remove from grill and let rest for 1-2 minutes.

    Slice against the grain into 1/4-inch thick slices. Garnish with sliced green onions.

Cooking tips

  • Tuna is best served rare to medium-rare. Overcooking makes it dry and tough.
  • Use sushi-grade tuna if you prefer your tuna very rare.
  • If you don't have a grill, use a very hot cast-iron skillet instead.
  • The sesame crust adds flavor and helps protect the tuna from overcooking.
