Instructions

Prep: 10 min | Cook: 12 min

  1. 1

Pat trout fillets dry. Brush both sides lightly with olive oil.

  2. 2

Season with salt and pepper on both sides.

  3. 3

Preheat grill to medium-high (400°F). Oil the grates well.

  4. 4

Grill trout skin-side down for 5-6 minutes without moving.

  5. 5

Flip carefully and grill 4-5 minutes more until flesh is opaque and reaches 145°F.

  6. 6

Mix dill, lemon juice, and garlic in a small bowl. Spoon over hot fish.

  7. 7

    Serve immediately with lemon wedges.

Cooking tips

  • Leave the skin on—it helps hold the fillet together on the grill.
  • A fish basket or grill mat prevents sticking on wire grates.
  • Rainbow trout is delicate; use a wide spatula when flipping.
